4 ingredient Coconut Milk Chocolate Pudding

Do you know one of the foods I have most missed by removing milks and sugars from my diet? Chocolate. Chocolate in all forms. Chocolate in all flavors. But mostly in the silky smooth form of pudding and mousse. I ADORE silky smooth chocolate and milk smooshed into one big giant bowl of deliciousness!

Do you know what I have found as a fantastic substitute for my favorite chocolate mousse recipe?

Let me tell you!! (I am uber excited about this one for you guys!)

(insert clapping hands and jumping up and down motions!)

This coconut chocolate pudding is made with 4 ingredients and dairy or sugar isn't one of them!

Chocolate pudding made with coconut cream! As in… no dairy! Score. Swoosh. Bam. 

Okay, I can tell you aren’t quite as excited as I am. But that’s simply because you still don’t understand the beauty of this treat. It’s only 4 ingredients, 5 minutes, and DONE. No milk, no sugar, no eggs, no wheat…only creamy chocolatey goodness.

Yes, it’s too good to be true. Yes, I’m pulling your leg. Yes, I’m a liar.

But not in this!! I would NEVER lie about smooth and sweet chocolate pudding. NEVER EVER. 

There isn't dairy OR sugar in this coconut chocolate pudding. But, it's smooth and creamy just like all pudding should be! Made with coconut.

God’s Eye mirror craft

Today I have a craft project!! I know, ring the bells, send out the banners, it’s a big day! I realized I had been talking about food, food, food lately and forgetting to give you all a bit of a craft fix from time to time. Sorry about that! Today I have a fun kid’s craft that will be a great way to pass a January Saturday afternoon.

Do you remember the God’s Eye we all used to make at summer school each year? These are a glorified version of that old-school craft. Popsicle sticks and string, y’all.

These items are mostly purchased but feel free to recycle those popsicle sticks from your kids! And, if you are having kids do this project you can pull out the good ol’ Elmers glue if it makes you feel better than using a hot glue gun. Do what works best.

The mirrors are easily purchased at your craft store. You can often find small mirrors at a home improvement store, as well. There is nothing fancy about this….simply flip the mirror over and glue on the popsicle sticks.

Note: if using Elmer’s glue  you will have to wait for the glue to dry before moving on to the next step.

Now we go old school and wrap the string. And wrap. And wrap. Maybe drink a bit of coffee (or for kids, cocoa.) for a break. And do it again.

When you get to the end of your wrapping, use a bit of hot glue (or Elmer’s, if you prefer) to tack the string end down to keep it from unraveling on you.

That, my dear friends, is an old-school craft. The way crafts were intended. With popsicle sticks, glue, and string. For real. Hang them in multiples on a wall for a fantastic bit of decor. I mean, people pay serious money for these kinds of personalized mirrors!

Mirror Craft   


Materials

Package of small mirrors (found at most dollar or big box stores)
Colored popsicle sticks
Yarn
Glue gun
Scissors
Glitter, buttons, sequins and any other embellishments of your choice
(refer to photo)

Instructions


Flip the mirror over and arrange the colored popsicle sticks into a "sun" or "flower" shape. Hot glue them into place.  (refer to photo)

Unravel a few feet of yarn, hot glue the end onto the back of the mirror between 2 popsicle sticks (refer to photo)

Start wrapping the yarn around each popsicle stick twice.  Wrap twice, and go around the next popsicle stick twice.  And so on.   (refer to photo)    

Wrap the yarn as far up the popsicle sticks as you wish,  end by securing the yarn on the back with hot glue.  (refer to photo)

Decorate as desired with glitter, buttons and more!  A braided strip of yarn glued to the back of two popsicle sticks makes a great hanger!

After seeing the success that our homemade chocolate cake recipe has had and how much you all love it I realized that that my best white cake recipe could be something that you would find valuable as well. Having a chocolate cake or white cake recipe that you KNOW will produce a fantastic cake makes life so much simpler. It might take a bit longer to make these cakes than a box mix, but it certainly is better for you to use REAL ingredients. And, there is something so satisfying to make a cake. Put a bit of music on, pour a glass of wine, and get baking. Truly, you’ll be feeding your soul!

Classic cakes like chocolate cake, white cake, carrot cake, and pound cakes never go out of style. Especially really, really good cake recipes like grandma used to make!

Tips to a perfect white cake:

  1. Use room temperature buttermilk and egg whites.
    Don’t skip this. It makes a huge difference!! Just set your buttermilk and whites on the counter a few hours before you intend to start.
  2. Using shortening keeps your cake white in color.
    But don’t be afraid to use butter! The flavor is better. Just be sure your butter is softened a bit.
  3. Spray & flour your pans.
    There is nothing worse than cake that sticks to the pan. Especially when making layer cakes. Of course, if you are making a 9 by 13 cake there is no need to worry about this step as much as if you are attempting a layer cake. You can even pick up cooking spray that is made just for baking and has flour right in it…easy peasy!
  4. Use clear vanilla concentrate, if possible.
    Again, this does nothing for the flavor…only the color. And don’t be afraid to try almond extract….yum!
  5. Use good flour.  We used Bob’s Red Mill.  It’s organic and incredibly versatile.  And it is the same high protein flour used by professional bakers and produces high, well-textured loaves of bread equally as well as it produces light, airy baked goods.
  6. Make your own buttermilk, easy-peasy…
    1 cup of regular milk
    1 tablespoon lemon juice or vinegar
    Stir together and let sit 10 minutes…buttermilk!

I’m a big fan of tried and true recipes, and this white cake is one of them. I can imagine a family back in “the day” sitting about talking and laughing around this very same cake. That makes me feel like I have a small touch of the “way it was” in my kitchen. Granted, I am making this cake with my fantastic oven, mixer, and fancy pants tools. But still. I still have a bit of nostalgia for recipes like this.

Do you know what people do for fun in Minnesota? They ice fish. As in, go out on the frozen lake, drill a hole through the ice, and stick their fishing pole down. I know…crazysauce! Minnesota is a fishing mecca that people travel far and wide to come to simply to freeze their buts off for little fishes. 

Oh but those little fishies are tasty! And the most famous Minnesota fishie? The walleye, of course. This hot walleye dip is a fantastic way to cook up Minnesota’s favorite fish. The dip is cheesy and creamy acting as a perfect way to showcase your walleye. If you don’t have access to walleye other white fish will be delicious, as well!

Putting the cheese mixture on the bottom of the baking pan BEFORE and SEPARATE from the fish helps to keep that fish the star of the dip. With each scoop of dip you are sure to get a chunk of gorgeous walleye.

Now, for those of you without access to walleye. Or, you want to use another of your favorite fish… go for it! Alaskan cod, trout, sunfish, and many others of the white fish would be excellent in this dip.

I always cook my fish skin side down with a pat of butter. When cooking a fish as special as walleye, DON’T skip the pat of butter. Walleye deserves you adding the extra calories. For this dip, I also cook onions along with the fish and then flip the fish over for a couple of minutes just to absorb some of that butter and onion flavor. That means that ALL of the flaky pieces have some great butter and onion flavor.

After you’ve cooked the fish (and gently flaked it and stirred it with the onions) press it gently into your cheese mixture. The dip will meld beautifully while it bakes without losing any of those great chunks.

Why am I using a pie tin rather than a gorgeous baking dish? First reason…I don’t own a baking dish just for a dip and feel no reason to purchase one when something I already own will suffice. Second reason…pie tins are used for everything here in Minnesota, even as plates (no really!?! some “cool” restaurants use them and everyone goes crazy for it!). Third and most importantly…I love the depth of pie tins for dips. They make it so you can get everything in the dip with one scoop.

Top the dip with more cheese and some breadcrumbs to give it a great crunch and golden brown flavor. Bake it up in the oven for about 25 minutes. The top will be golden brown and the edges will bubble when it has reached perfection. 

Note: You can use crushed potato chips or crackers here if you like.

Your capsule wardrobe is intended to last you 3 months. Those 3 months will be your season. Summer, winter, fall, and spring capsule’s. It is absolutely up to you if you completely replace your entire wardrobe each season. I can’t afford that so I swap out items each season and have several that are staples throughout the year. Be mindful of the season when thinking of what you will need and how many of each item you want that season.

Tip:

Each time you make a capsule wardrobe for the season you will have learned a bit more of what works. Adapt and adjust accordingly. A capsule wardrobe is intended to make things easier; being stuck on rules at the expense of creating something that will work for you is silly.

You need to decide what style clothing your capsule wardrobe needs to accommodate. Do you need mostly office clothing or athletic gear? Plan accordingly. Do you often go out on weekends and need cocktail dresses? Keep that in mind. Make a list of the type of clothing you wear in a month and put a number next to each type for how many days you wear them. Now you can plan the number of pieces your personal capsule wardrobe will have.

Tip:

This isn’t the time to pick out clothing. Don’t look at your wardrobe. Now is the time to simply look at your lifestyle and what your lifestyle requires from your wardrobe.

Rice Krispie Conversation Hearts

 

Make these cute Rice Krispie treat conversation hearts for a great Valentine's Day activity with kids!

These little Valentine’s Day rice krispie treats are a simple, fun way to spend a cold Saturday afternoon with the kids. If you are in Minnesota cold means… -30 windchill. The kind of cold that freezes your breath before you even get a chance to THINK about breathing. But that’s okay, I can hibernate inside with my kids and cover krispie treats in chocolate and candy. 

These treats don’t need a recipe or instructions. In fact, they are so simple I feel like I’m cheating you all a bit out of a recipe post. But hey, I am constantly reminded by my readers that they come to NellieBellie because I give them the ideas and recipes they would never think of. So, let’s hope these cuties are one of those that you wouldn’t normally think of :). 

These are a great Valentine's Day treat! Conversation hearts made from Rice Krispie treats are easy and fun to make!

My kids are old enough that the passing of Valentine’s around the class doesn’t happen anymore. That makes me happy and sad. Happy because remembering to buy those Valentine’s cards for the entire class was a pain. Sad because my kids are getting older and beyond some of the cutsie stuff.

These “Orbit” Gum Valentine’s were from a few years ago. Cute. But gosh do I NOT miss doing up this stuff yearly!

Them being older and not interested in the cutsie candy and cards of Valentine’s won’t stop me for one minute from forcing them to spend an afternoon making these cute guys. Phones down, music on… let’s go, it’s family togetherness time!

HOW:

Simply make a batch of Rice Krispie treats and form them into hearts before it cools (be sure to use damp or greased hands!). 
Melt white chocolate, candy coating, or milk chocolate and spread on the top of the hearts.
Decorate with candy or icing. 

Easy!

Balance. Does it exist?

I’ve been reading article after article from parents, teachers, business people, and “experts” about the struggle of finding balance in life. About balancing family, work, fun, and all the stuff that life throws at us. Conversation after conversation, tip after tip, criticism after criticism all in the hunt for the elusive beast that is balance.

Stop hunting. Balance doesn’t exist. It can’t.

Whoa!! Gasp. I know it’s the wrong, un-popular thing to say. Let me say it again….

Balance doesn’t exist.

Who thought up this word and this goal? Where did it originate? Certainly not a parent. Or someone simply trying to make a living. How about a college student? Nope, pretty sure they didn’t make up balance. I know, I know…a small business owner! Ha! We can all giggle at that one.

Unless you lead a perfect life (if you think you do, you are delusional) you are devoting more time to a single area of your life than another. Usually out of necessity. True, choice is in there. But, it is a rare person that can choose a life completely void of dedication to a particular area, be it work, school, parenting, a relationship, etc.  Balance, in the way it is commonly used, is not a reality we can achieve.

Perhaps you are a single mom and you are struggling to work and take care of your children. Adding the guilt of not “balancing” work and parenting doesn’t help you one bit. You can’t do a damn thing about your need to work and have your children in daycare. Does that make you less of a parent…no. I say it makes you MORE of a parent. Should you try to find time with you kids? Absolutely. Yet, I dare say that your children will grow up with a great respect for you and your hard work. And that is something to be proud of.  Your life is not balanced, but it can still be good.

Maybe you are a college student with a part-time job to try to pay bills. What is this “balance” they speak of? For you, it’s simply balancing the need to keep your grades up with your need to pay for college. Forget eating healthy, going home for holidays, staying up to date on the world around you, having a hobby, reading for FUN??…you are lucky if you remember to do those on a GOOD day. Balance is a ridiculous idea, at least in the context in which the world tends to use it.

A working father putting in more than 60 hours a week can’t possibly “balance” his world. Just look at the hours that he has left for family, sleeping, mowing the lawn, friends, voting, and the other five million things that make up a life. He simply doesn’t have the time in the day to have “balance”.  Sure, he can cut back on hours (maybe?). But then that throws another part of his life out of “balance”. He now watches the kids more often after school instead of working to save money. Which means he doesn’t have the income to care for the house, car, college, etc.. He can make different choices about priorities, but his life isn’t going to be completely in “balance”.  

For me, the better question is how to lead a life that is fulfilling and happy. Balance has little to do with it. Every single day we are focusing on something different, a new goal, relationship, or struggle. It often receives a majority of our attention. There is nothing wrong with that. The question should be whether we end that day feeling fulfilled and happy. Are those we love fulfilled and happy? Yes? Well done.  Was it a balanced day?  Who cares!

I say we throw out the idea of balance.

Instead, let’s focus on our lives as a whole, our relationships as a whole, and our jobs as a whole. If we are fulfilled and our loved ones are fulfilled, if we are happy and our loved ones are happy, then we are on the right track. There will always be room for improvement and change. But let’s take one more pressure off our shoulders. The pressure of achieving balance.

Often we have a nice dinner around Valentine’s Day (never ON Valentine’s Day…packed restaurants are NOT our thing!), and then we often grab take-out and binge on Netflix or new releases we’ve been saving. After 19 years of marriage, we don’t need the wine and chocolate cake. Besides, my chocolate cake recipe is the best there is. Not even joking…

Ole and Lena were eating dinner when Ole yelped and exclaimed…”Lena, vat did ya put in da food, it’s dam spicy!”. Lena said “Dat neighbor down da street gave me something and told me it would make da food da best food we ever had. Cripes, I knew he vas no good.” Ole…” What vas da spice?”. Lena…”Pepper.”

And that, my dear friends, sums up the whole spice profile of Swedish cooking. Okay, so there IS pepper and salt used in Swedish dishes. But that’s about all the spices good, traditional Swedish dishes have. They tend to be very bland by most other cuisine standards.

How do I know this? Well, I worked in a local cafe for quite sometime as a teenager in a MN town called Mora.  Mora is all things Swedish. Mora is the home of a gigantic Dala horse, and a Mora clock commemorating the town’s Swedish roots. Mora’s sister city and namesake is Mora, Sweden. Mora DOES Swedish. And that little local cafe I worked at knew how to cater to its locals! Which meant it knew Swedish dishes inside and out.

At that cafe, I learned how to make many a Swedish dish. Yes, even lutefisk. Gah!! Try getting that smell out of your clothes!

AND…AND…Nate is 1/4 Swedish. I remember when we first married and I met his great-uncles Raymond and Russell. They were 100% Swedish, spoke Swedish, cooked Swedish, and one was dressed in overalls every time you saw him. And they were huge, tall men. Nate’s grandpa and these great uncles were children of Swedish immigrants. 

Quite a few years back Nate’s great-uncle was becoming too elderly to stay in his home by himself and wanted to clean out some of his belongings. I was utterly thrilled to be able to get one of the trunks that traveled with the family on the boat from Sweden. That, along with an original Swedish hymnal and Bible are treasures in our home. The stories and history those items have must be incredible!

Nate’s parents stick to meat and potatoes, salt & pepper as the only spices, and lots of cream in their dishes. Standard Swedish cooking. I am often looking for the salt and pepper shakers when we are at their home for dinner. The Swedish roots are strong with those two :).

Swedish Meatballs have their roots as leftovers. No really, it’s true! The meat came from whatever scraps of meat and fat were leftover from the week, and then ground. Which is why Swedish Meatball recipes feature a blend of multiple meats. Onions were readily available because of the ease of storing them in the winter. Breadcrumbs were the leftover pieces of bread that had become stale or not used. And cream? Well, what is a Swede without good cream? 

Truly, Swedish Meatballs are the ultimate in leftover use!

Why did they cook them in a pan, you wonder? Well, I’m thinking that they weren’t terribly concerned about perfect ball shapes for their leftovers. AND…ovens. Yeah, they weren’t quite as available, in that time, as a plain ol’ fire or cooktop.

Traditionally, Swedish meatballs use the scrapings of the pan with a bit of cream and flour added to create the gravy that you pour on them. And, of course…serve with potato puree and lingonberries. 

Notes about Swedish Meatballs:

  1. Chilling the meat mixture for about an hour will help the balls hold together while cooking.
  2. Traditional Swedish Meatballs are soft in texture, this is normal.
  3. Balls that are only 1 inch in size is traditional. Probably because of how quick they were to cook.
  4. Traditional Swedish Meatballs aren’t really balls. More like triangles. They are cooked on a side and then turned, resulting in more of a triangle shape. Perfect.
  5. Traditional Swedish Meatballs are rather bland, almost sweet (because of the nutmeg) in flavor. Feel free to adjust the recipe as you prefer.
